A look back at trends that dominated menus this year

This year, the desire to keep things interesting at the end of the meal had pastry chefs across the country getting creative. Here's a look back at some of the tastiest dessert trends that dominated menus this year and will likely continue into the new year.

Bourbon baked goods

With brown liquors "on fire," as chef<http://nrn.com/menu/chef-insights> Jason McClure of Sazerac in Seattle put it, this year more bourbon began showing up, not just at the bar, but in desserts as well.

McLure's contribution to the boozy trend is Banana Bread Pudding with Whiskey Sauce, a riff on the classic Bananas Foster, with sliced bread that is layered with bananas, pecans and a hard sauce made of whiskey, egg yolks and sugar.

Whether or not you celebrate Hanukkah, it's hard to deny the appeal of crisp-fried potato latkes-which is why chef Jason McClure of Sazerac<http://www.sazeracrestaurant.com/> creates an entire latke menu for the month of December. Past favorites reflect Sazerac's quirky, Pan-American culinary style, including latke "sliders" with garlic aioli and caramelized onion on brioche buns; latkes with smoked salmon and crème fraîche; and an inventive take on the classic applesauce topping, with goat cheese and an apple and celery heart salad.
